Spring Break

A warm mellow sun shines on us today as we let the cattle out from their winter confinement.  Each spring as soon as the ground is dry enough that cows won’t punch hundreds of holes in it with their sharp hooves, we turn them out of the barn for their first taste of spring.  They relish the fresh grass and can hardly choose between kicking up their heels at the joy of spring and tasting their brand new pasture.

Everyone, including our son Jeff and his family, has to stop for a few moments each spring to watch them frolic with such abandonment.  Fifteen-hundred-pound milk cows gallop and leap like young calves, huge udders swinging to and fro.

They are a pretty funny sight but certainly one of the first signs that spring is here to stay.

This flavorful salad dressing is perfect with tender spring lettuces and all the fresh herbs popping up in my garden and flower beds.

Blend until smooth in a blender or food processor:

  • 1 cup olive oil
  • ¼ cup catsup
  • 1 T. Worcestershire sauce
  • ¼ cup tarragon vinegar
  • ½ cup sugar
  • ½ t. salt
  • 1 small onion
